I just attended a talk by a dietitian about the recommended diet to prevent cardiovascular disease; low sodium, low saturated fat, less red meat, 10 servings for fruit and veg a day etc etc.

They could have saved a lot of time by just showing this picture and saying "not this!"

Or even more saved the two words.

Then it was carpaccio of monkfish and red shrimp:

And finally belly of tuna on truffled mash for Jon and mixed fried seafood for me:

All washed down with a bottle of Manzanilla:

It wasn’t a traditional foie gras. It was much lighter and more delicate in texture - almost like a mousse. It’s free range Spanish foie gras.
