Round two: a better rise and shape than last time, but the crust was a little bit chewy. Advice welcome!

I believe steam is the key to a crispy crust, so tray of boiling water or ice cubes in the oven or put the whole thing in a large casserole dish so the evaporated water stays as steam.
And no, don't put jam. Just butter. Or perhaps thick cut ham off the bone as well. And mustard.

I have a fancy pants steam oven, with steam settings the same as the crustier loaf I made last week.

That's me out. I didn't even know there was such thing as a steam oven (and would have assumed it was invented by Stephenson)

Spotted in Tescos
At first I was horrified (I shared this on Facebook with the caption "What fresh hell is this?"), then intrigued. Now I am curious. It's almost inevitable I will try it if I fancy rose before the price goes back to £9
